Jackson attended Hahnville High School in Boutte, Louisiana. He played wide receiver and quarterback in high school. He earned 3-star ratings, and committed to play football at Tulane.
As a freshman, Jackson made just 2 receptions. However, as a sophomore, he had an early breakout season, making 31 receptions for 425 yards and 8 touchdowns. This performance had scouts keeping their eye on Jackson for future drafts.
Over his final two seasons at Tulane, Jackson made 59 receptions for 995 yards and 7 touchdowns, solidifying himself on draft boards across the league.
